Spicy Grilled Baby Bok Choy

Not every grilling recipe has to feature meat. I promise, no one has kidnapped me and taken over the blog. Today, we’re going to talk about a baby bok choy recipe that is so good, it could be a meal. Don’t worry—the garlic and ginger flavors also pair beautifully with meat, so if you’re grilling chicken, make this as the side.

Baby bok choy isn’t a traditional grilling ingredient for most American grillers and it’s time to change that. I’ve used inspiration from my time globe trotting in the Marines to develop the flavors in this quick and easy baby bok choy recipe. In under 20 minutes, you can char this delicious side dish on your gas or charcoal grill.

If you’re interested in a flavorful dish with a subtle heat that you can cook up quickly on any weeknight, this is the recipe for you. Seriously, grab some red pepper flakes, olive oil, and baby bok choy and you’re basically ready for the grill. My family is sensitive to spice, so I’ve gone easy on the red pepper flakes. But if your palate is up for the challenge, add more for a deeper heat. Once you’ve tried this easy baby bok choy recipe, you’ll be a fan.

Spicy Grilled Baby Bok Choy

Serves: 4 | Prep time: 10 mins. | Cook time: 12 mins.

Ingredients
2 baby bok choy
3 tbsp butter
3 tbsp olive oil
3 cloves garlic, finely minced
1/2 tsp ground ginger
1 tbsp red pepper flakes
1 pinch kosher salt per baby bok choy half

Step-by-Step Instructions for Spicy Grilled Baby Bok Choy Recipe

Step 1: Light grill and set up for high direct heat on one side and low on the other. If you need some help setting up your charcoal grill to do this, check out my blog on two-zone heating.

Step 2: If you’re wondering how to cut baby bok choy, there’s an easy way. Using a sharp knife, slice the baby bok choy in half lengthwise and set aside.

Step 3: Place a saucepan over low heat on grill and melt butter. Add the garlic, olive oil, ginger, and red pepper flakes to the melted butter and whisk together. Cook for 5 minutes, until flavors are fully incorporated. This can also be done on your stove inside or on the side burner that many gas grills come with. I like to cook as many things outside as possible because after all, we’re all United By Flame.

Step 4: Spoon the melted butter and olive oil mixture all over the baby bok choy.

Once covered, grill bok choy cut-side down over high direct heat for 3 minutes. Turn the baby bok choy and grill the opposite side for 3 minutes, or until you achieve the nice char as pictured below.

Step 5: Remove the baby bok choy from grill and sprinkle a pinch of kosher salt on each half. Serve hot.

  • Remove from grill and sprinkle a pinch of kosher salt on each half. Serve hot.
