Steak and Sage Butter Fried Egg Recipe

This is a very easy, and very satisfying breakfast designed for those that may not have the best skills in the kitchen. In fact, we’re using leftover steak that you either made yourself or brought home from the steakhouse.

What could be any more simple than that? The breakfast is also an amazing way to get rid of the hangover you have from all the wine you drank with the steak dinner the night before (so I’ve heard…).

I typically like to do this on my outdoor griddle, but you can also do this recipe on a cast iron skillet. Add whatever sides you want to this—fried potatoes and onions are excellent accompaniment to the steak and eggs, some soft spreadable cheese (one of my favs), or even a fresh arugula salad.

Finally, don’t limit this to just leftover, this is something that can be done with a thinly sliced breakfast steak as well.

Steak and Sage Butter Fried Egg Recipe

Serves: 2 | Prep time: 5 mins. | Cook time: 5 mins.

Ingredients
Cold leftover steak (I used strip steak but you can use whatever steak you have left over.)
3 eggs
2 tbsp Sage Brown Butter

Step 1: Slice cold steak in 1/4 inch thin slices. It is much easier to get thin slices of steak when it is cold.

Step 2: Heat cast iron skillet or griddle surface to medium heat.

Step 3: Melt one tablespoon of sage brown butter on griddle or cast iron pan and crack three eggs onto hot surface. For sunny side up, cook these for four minutes without turning.

Step 4: With 45 seconds remaining, add an additional tablespoon of butter and drop the steak in.

Step 5: Remove steak and eggs and serve immediately.
