3largeboneless skinless chicken breastscut into 25 1" cubes
1lbbacon
1lblarge shrimpdeveined (optional)
2tbspolive oil
2tbsphomemade bbq rubor your favorite rub
1cuphomemade bbq sauceor your fav glaze
2tbspfresh parsleyfinely chopped
Instructions
Light your grill and set it up for two zone cooking.
While the grill is preheating, place five chicken pieces on a flat skewer, weaving a double slice of bacon around each piece of chicken. Repeat till the chicken is all on skewers.
Divide the optional shrimp into three equal portions, and place them on sets of double skewers. Using a double skewer prevents the shrimp from spinning on a single skewer.
Evenly coat the chicken and shrimp skewers with a light coat of neutral oil, and then lightly season both with the BBQ rub.
Place the chicken skewers on the grill, over direct heat. Let them cook until evenly charred on all sides, about six minutes total, flipping often.
Move the chicken to the indirect side of the grill and glaze with BBQ sauce. Close the grill’s lid and allow the sauce to set for four minutes.
