If you’ve visited this site before, you know I’m a fan of sandwiches. It’s amazing what you can do with a few slices of bread and some imagination. One of the great things about sandwiches is that adding one little ingredient can completely upgrade the flavor profile.
Today, we’re talking about one of my favorite sandwich upgrades: pickled red onions. This delicious condiment makes every sandwich just a little bit better.
Usually, pickled red onions appear on menus in fancy sandwich shops, but I’m here to tell you they belong in your home kitchen too! With my quick and easy recipe, you’ll wonder why you haven’t been making pickled red onions all along. Depending on your preferences you can add in some really fun extras to customize the flavors of these pickled red onions.
I normally make a double batch of this easy pickled red onions recipe when I do them: some plain and some with rosemary. Those are my two favorite versions of the these quick pickled onions, but you can also do them with garlic, spicy peppers—your imagination is your limit with this recipe.
Pickled Red Onions
Serves: 6-8 | Prep time: 15 mins.
1 red onion
1 cup white vinegar
1/2 cup apple cider vinegar
2 tbsp sugar
1 tbsp sea salt
1 tsp whole black peppercorns (optional)
2 sprigs rosemary (optional)
Step-by-Step Instructions for Making Pickled Red Onions
Step 1: Peel your raw red onion. Slice the red onions as thinly as possible with an extra sharp knife.
Step 2: Place the thin sliced onion into a 16 ounce mason jar. If you don’t have a jar, any sealable glass or plastic container will work. Add optional rosemary sprig and black peppercorns to the mixture, if you choose.
Step 3: In a small saucepan, bring both vinegars to a low boil. Add in sugar and salt, whisking until they dissolve.
Step 4: Using a funnel, pour vinegar into jar. Ensure onions are completely covered.
Step 5: Allow mixture to cool to room temperature before putting a lid on the sealable container and storing in refrigerator.
You can keep this easy pickled red onions recipe in your refrigerator and take it out any time you’re looking to add a little kick to your sandwiches.
