Homemade Seasoning: Rosemary Salt

I was buying rosemary salt by the gallons and spending a ton of money because I use it on just about everything. I love it on roasted potatoes, but it’s good on steak, pork—even mac and cheese.

Anyway, after spending way more on this stuff than I care to admit to, I decided to make it myself. The first few times weren’t quite right, but what you’ll find below is the perfect formula, in my humble opinion. The key is to finely grind a portion of the rosemary as described below to give that perfect mix of coarse and fine.

Stored in an airtight jar it can keep for weeks, maybe longer—it just never lasts that long around here.

Homemade Rosemary Salt Recipe

Yields: 1 cup | Prep time: 10 mins | Active time: 20 mins

Ingredients
½ cup sea salt flakes
¾ cup rosemary, removed from stalks
Zest from 1 lemon

Equipment
Coffee grinder

Step-by-Step

Step 1: Preheat oven to 200 degrees Fahrenheit.

Step 2: Line a tray with foil. This foil lining will make it easy to pour into the grinder later.

Step 3: Mix salt, ½ cup rosemary, and lemon zest on one side of the foil-lined tray. Place the ¼ cup rosemary on other side of try. Be very careful to not mix them together, as it can affect the flavor we’re going for.

Step 4: Bake for 20 minutes.

Step 5: Remove from oven and let cool to room temperature. Form the foil into a funnel-shape for an easy and mess free pour.

Step 6: Add the salt, ½ cup rosemary, and lemon zest mixture to a coffee grinder and blend it coarsely.

Step 7: Be careful not to over-grind or you’ll end up with powder. Pour ground mixture into a container.

Step 8: Blend remaining ¼ cup rosemary in coffee grinder until it becomes a powder.

Step 9: Mix rosemary powder with the coarse mixture.

Step 10: Store in an air-tight container.
