Butter Burgers

I’m no stranger to a good burger — or any burger, really — but a good burger and I get along like peas and carrots. When I heard about the concept of a butter burger I couldn’t believe I hadn’t thought of it myself. A fellow Instagrammer mentioned the concept to me and I knew I had to give it shot.

Butter Burgers

Serves: 6-7 | Prep time: 20 min | Cook time: 12 min

Ingredients

2 lbs ground beef
1 stick butter, frozen
1 medium Vidalia onion, sliced
1 package sliced mushrooms
Lettuce
Provolone cheese
Salt and pepper
Vegetable oil
Buns

Equipment

Box grater
Flat top griddle, or cast iron pan

Step-by-Step

Step 1: Using the small holes on a box grater, grate the frozen butter.

Step 2: In a bowl, add ground beef, grated butter, salt, and pepper. I use an 80/20 fat-to-lean beef ratio. Mix ingredients thoroughly by hand.

Step 3: Form the meat into 6 or 7 patties, depending on how big you want them. Press a small indent into the center of each burger. This will prevent the burgers from cupping during the cooking process.

Step 4: Sprinkle salt and pepper on top of patties. I like a generous amount of both, but use what you’re comfortable with.

Step 5: Place a flat top griddle or cast iron pan over high heat.

Step 6: Put a little bit of vegetable oil on the flat top or in your cast iron skillet, and place the burger patties on top. Let the burgers cook for about 4 minutes on each side in order to develop a nice, flavorful crust.

Step 7: Next to the burgers, drizzle more vegetable oil onto the flat top, adding onions and mushrooms. I typically use baby bella mushrooms. Sauté until tender.

Step 8: After flipping the burgers, top each with a slice of provolone cheese.

Step 9: Place the buns face down on the flat top to get them lightly toasted. I find onion buns work especially well with this combination of flavors.

Step 10: Remove the buns from the flat top, and place lettuce leaves onto the bottom of each bun. Placing lettuce underneath the burger helps prevent the juicy, buttery patties from leaving you with a soggy bottom bun.

Step 11: Place burger onto the bottom bun, and top with sautéed onions and mushrooms.

  7. Sauté the onions and mushrooms next to the burgers, adding more oil to the pan if needed. Cook until tender.
  8. After flipping the burgers, top each with a slice of provolone cheese.
  9. Place the buns face down on the flat top to get them lightly toasted.
  10. Remove the buns from the flat top, and place lettuce leaves onto the bottom of each bun.
  11. Place burger onto the bottom bun. Top with sautéed onions and mushrooms.
